  • 4 veal paupiettes
  • 1 onion
  • 50 ml olive oil
  • 300 ml tomato purèe
  • salt
  • pepper
  • 5 sprigs of tarragon
  • 1 pinch cayenne pepper

Preparation

  • Peel the onion, cut it into 4 pieces, and put it into the ThermoCook bowl. Mix at speed 10 for 10 seconds.
  • Attach the blade protection and butterfly tool.
  • Then add the olive oil and let it cook at 120°C for 5 minutes.
  • Now add the paupiettes, the tomato purèe, the tarragon and the cayenne pepper. Salt and pepper, then let it simmer at 100° for 20 minutes.
