  • 300 g medjool dates, soaked, without pits
  • 175 g soaked almonds
  • 175 g soaked hazelnuts
  • 150 g unsalted cashew nuts
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • grated coconut

  • Soak the dates, almonds, and hazelnuts overnight in water with a dash of apple cider vinegar or a pinch of baking soda. Soaking these ingredients is really the key tip here as the recipe will definitely work in a high-speed blender. In the morning, drain off the soaking water and rinse the nuts and dates well and pat dry on a towel.
  • Next, remove the pits from the Medjool dates and roughly chop the hazelnuts and almonds with a large knife. Then you put them in the blender together with the dabbed dates and the cashew nuts and a teaspoon of vanilla extract. Alternatively, you can use the pulp of a vanilla bean.
  • After the blender is tightly closed, run it on high to maximum speed so that all the ingredients are crushed and blended. Use the pestle to press the ingredients towards the knives during the mixing process so that the knives don't run empty. This is without a doubt a recipe that occasionally (when the mixer is off) has to be helped out with a spoon if the mass becomes too tough.
  • Once everything is well blended, use a spatula or spoon to scoop the mixture out of the blender and roll it into walnut-sized energy balls in your hands.
  • The balls get the crowning glory with a snow-like coating of grated coconut. To do this, simply dip the finished balls into a bowl of coconut flakes and roll them around until they are covered on all sides. The finished balls will keep in the fridge for about a week!
