  • 3 endives
  • 40 g flour
  • 40 g soft butter
  • 40 ml milk
  • 200 g grated cheese

Preparation

  • Preheat the oven to 210°C. Add the flour, milk, salt, and pepper to the Thermocook bowl (butterfly tool) and mix at speed 7 for 1 minute.
  • Add the butter and let it cook at a speed of 4, 90°C for 8 minutes. Add 50g of grated cheese and mix at speed 5 for 30 seconds. Take out the food and clean the bowl.
  • Then pour 0,7l of water into the jug, add the endives to the steaming basket and let it cook for 30 minutes at 30°C.
  • Wrap each endive in a slice of ham and put them in a dish for gratins. Cover 52 with the sauce and spread the cheese over the endives. Season with pepper.
  • Cook in the oven for about 15 minutes. Serve warm.
