Effortless Carrot cake
Ingredients

- 2 carrots cut into 5cm pieces
- 2 eggs
- 160 g raw sugar
- 150 g flour
- 1 tsp vanilla extract
- 110 g vegetable oil
- 1 tsp bi-carb soda
- 1/2 tsp mixed spice
- 1/2 tsp salt
- 60 g walnuts
Cream Cheese Icing Ingredients
- 1 tsp lemon peel
- 230 g icing sugar
- 30 g butter
- 60 g cream cheese
- juice of 1/2 lemon
- walnuts
Instructions
Preparation
- Preheat oven to 180°C.
- Place in carrots. Select CHOP: P04 35 seconds.
- After 10 secs press PAUSE & add all other ingredients except walnuts. Press PAUSE again to restart.
- After another 10 secs press PAUSE, add walnuts then press PAUSE again to restart.
- Pour into well-greased 20cm ring tin or small loaf tin.
- Bake in the oven for 45 minutes.
- Meanwhile, make the cream cheese icing.
- Add lemon peel and sugar to the bowl. Select CHOP: P04 35 secs.
- After 10 secs press PAUSE and add butter, lemon juice, and cream cheese. Press PAUSE again to restart.
- After another 10 secs press PAUSE and scrape down with a spatula. Press PAUSE again to restart.
- Spread over cooled carrot cake & sprinkle with walnuts if you desire.
