Effortless Carrot cake

Ingredients

  • 2 carrots cut into 5cm pieces
  • 2 eggs
  • 160 g raw sugar
  • 150 g flour
  • 1 tsp vanilla extract
  • 110 g vegetable oil
  • 1 tsp bi-carb soda
  • 1/2 tsp mixed spice
  • 1/2 tsp salt
  • 60 g walnuts

Cream Cheese Icing Ingredients

  • 1 tsp lemon peel
  • 230 g icing sugar
  • 30 g butter
  • 60 g cream cheese
  • juice of 1/2 lemon
  • walnuts

Instructions
 

Preparation

  • Preheat oven to 180°C.
  • Place in carrots. Select CHOP: P04 35 seconds.
  • After 10 secs press PAUSE & add all other ingredients except walnuts. Press PAUSE again to restart.
  • After another 10 secs press PAUSE, add walnuts then press PAUSE again to restart.
  • Pour into well-greased 20cm ring tin or small loaf tin.
  • Bake in the oven for 45 minutes.
  • Meanwhile, make the cream cheese icing.
  • Add lemon peel and sugar to the bowl. Select CHOP: P04 35 secs.
  • After 10 secs press PAUSE and add butter, lemon juice, and cream cheese. Press PAUSE again to restart.
  • After another 10 secs press PAUSE and scrape down with a spatula. Press PAUSE again to restart.
  • Spread over cooled carrot cake & sprinkle with walnuts if you desire.
  • Enjoy!
