Easy Vegan Protein Waffles Recipe

  • 2 cup rolled oats
  • 1/2 pack silken tofu
  • 1 1/2 cup plant milk
  • 1 tbsp extra virgin olive oil
  • 1 tbsp brown sugar
  • 1/4 cup cinnamon
  • 1 tsp vanilla essence
  • 1/4 tsp salt

Ingredients for the blueberry sauce

  • 2 cup fresh or frozen blueberries
  • 1/4 cup water
  • 1 tbsp maple syrup
  • 1 tsp lemon juice



  • In a saucepan, place blueberries, water and maple syrup, and lemon juice. Bring to a simmer. Cook for about 10 minutes, until the mixture has reduced and thickened.
  • In the meantime, in a blender, place oats, silken tofu, plant milk, olive oil, brown sugar, cinnamon, vanilla essence, and salt. Blend until smooth.
  • Brush the waffle iron with oil, and cook waffles until light brown and crispy, approx. 10 min.
  • Remove from the waffle iron and serve with blueberry compote, fresh blueberries, vegan butter, and maple syrup. Garnish with fresh mint.
