Easy Vegan Protein Waffles Recipe

- 2 cup rolled oats
- 1/2 pack silken tofu
- 1 1/2 cup plant milk
- 1 tbsp extra virgin olive oil
- 1 tbsp brown sugar
- 1/4 cup cinnamon
- 1 tsp vanilla essence
- 1/4 tsp salt
Ingredients for the blueberry sauce
- 2 cup fresh or frozen blueberries
- 1/4 cup water
- 1 tbsp maple syrup
- 1 tsp lemon juice
Instructions
Preparation
- In a saucepan, place blueberries, water and maple syrup, and lemon juice. Bring to a simmer. Cook for about 10 minutes, until the mixture has reduced and thickened.
- In the meantime, in a blender, place oats, silken tofu, plant milk, olive oil, brown sugar, cinnamon, vanilla essence, and salt. Blend until smooth.
- Brush the waffle iron with oil, and cook waffles until light brown and crispy, approx. 10 min.
- Remove from the waffle iron and serve with blueberry compote, fresh blueberries, vegan butter, and maple syrup. Garnish with fresh mint.
