Easy and Delicious Homemade Lemon Curd

- 140 g caster sugar
- 80 g unsalted butter
- 100 g lemon juice
- 2 eggs
- 10 g lemon zest

- Add the caster sugar to the mixing bowl and blend it on high speed for 10 seconds to ensure it is finely ground and will dissolve easily.
- Add the unsalted butter, lemon juice, eggs, and lemon zest to the mixing bowl, using a rubber spatula to scrape down the sides of the bowl and ensure all the ingredients are well combined.
- Set the temperature to 90 degrees Celsius and select a speed of 2. Allow the mixture to cook for 13 minutes, stirring occasionally with a rubber spatula.
- After 13 minutes, the mixture should be thick and creamy. Remove the mixing bowl and strain the lemon curd through a fine mesh strainer to remove any lumps or pieces of cooked egg.
- Transfer the lemon curd to an airtight container and let it cool to room temperature before storing it in the fridge for up to two weeks.
- To serve, simply scoop out the desired amount of lemon curd and enjoy! It's perfect for spreading on toast, scones, or using as a filling for cakes and pastries.
