- 500 g walnuts
- 500 g parmesan
- 60 g basil leaves
- 60 g dried tomatoes in oil
- 100 ml olive oil
- 2 garlic cloves

- Add the walnuts, dried tomatoes, parmesan, garlic, salt, black pepper, olive oil and basil to the blender. Blend on high for 15 seconds.
- Open the lid to scrape the content from the sides of the jug towards the center. Then put on the lid again and use a pulse to continue to blend until finely chopped (about 30-60 seconds longer).
- Transfer the pesto to a small container and cover it with plastic wrap, pressing the wrap so it lies against the pesto.
- Store in the fridge and consume within 3-4 days.
