Delicious Pumpkin Spiced Oats

  • 70 g oatmeal
  • 200 ml plant-based milk
  • 1/2 scoop vegan salted caramel soy protein
  • 1 banana
  • 100 g pumpkin puree
  • 1 tbsp chia seeds
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp maple syrup
  • 50 g vegetable quark
  • 1 tbsp peanut butter
  • 1 pinch pinch of cinnamon + pumpkin spice
  • 1 pinch salt
  • pecan nuts, grated coconut, figs



  • Put the oatmeal in a blender together with the vegetable milk, banana, pumpkin puree, protein powder chia seeds, baking powder, vanilla extract, maple syrup, cinnamon and a pinch of salt.
  • Blend this until smooth.
  • Use an oven dish and add half of the batter to it. Put the tablespoon of vegetable curd in the middle and then pour the rest of the batter over it.
  • Place the dish in the oven for about 20 minutes.
  • Finish with some leftover banana slices, pecans, grated coconut, figs and a tablespoon of peanut butter.
