Creamy vegan green pasta sauce

- 400 g cooked pasta
- 1 broccoli cut into small pieces
- 1 zucchini diced
- 1 large brown onion
- 6 garlic cloves
- 1/2 cup raw cashews
- 1/2 cup nutritional yeast
- 1/2 cup soy milk
- 1 tbsp olive oil
- sea salt flakes
- handful fresh basil
- handful of baby spinach
Instructions
Preparation
- Fry the onion and garlic with a big pinch of salt for 5 minutes then add the broccoli and zucchini and sauté until the broccoli is soft.
- Add the contents of the pan to a high-speed blender with the cashews, nutritional yeast, soy milk, basil, spinach and 1 cup of pasta water and blend until super smooth.
- Mix the sauce through your pasta, stir in another half a cup or so of the pasta water and add some extra salt.
- Serve and enjoy!
