Creamy vegan green pasta sauce

  • 400 g cooked pasta
  • 1 broccoli cut into small pieces
  • 1 zucchini diced
  • 1 large brown onion
  • 6 garlic cloves
  • 1/2 cup raw cashews
  • 1/2 cup nutritional yeast
  • 1/2 cup soy milk
  • 1 tbsp olive oil
  • sea salt flakes
  • handful fresh basil
  • handful of baby spinach



  • Fry the onion and garlic with a big pinch of salt for 5 minutes then add the broccoli and zucchini and sauté until the broccoli is soft.
  • Add the contents of the pan to a high-speed blender with the cashews, nutritional yeast, soy milk, basil, spinach and 1 cup of pasta water and blend until super smooth.
  • Mix the sauce through your pasta, stir in another half a cup or so of the pasta water and add some extra salt.
  • Serve and enjoy!
