Creamy Tofu Spinach Pasta

- 1 sliced onion
- 3 sliced garlic cloves
- 500 ml vegan stock
- 200 g diced tofu
- 70 g cashews
- 10 g nutritional yeast
- 1 pinch nutmeg
- salt, pepper
- 250 g spinach
Instructions
Preparation
- Saute onion and garlic until soft.
- Add stock, tofu, cashews and spices and cook for about 10 minutes.
- Set heat on Low and add spinach.
- Cook on low heat for 10mins until the spinach has wilted.
- Let the mixture cool down. Add it to a blender and blend until smooth.
- Mixed sauce with the cooked pasta ( add pasta water if needed).
- Drizzle with lemon juice and fresh parsley.
- Serve and enjoy!
