Creamy Tofu Spinach Pasta

  • 1 sliced onion
  • 3 sliced garlic cloves
  • 500 ml vegan stock
  • 200 g diced tofu
  • 70 g cashews
  • 10 g nutritional yeast
  • 1 pinch nutmeg
  • salt, pepper
  • 250 g spinach

Instructions
 

Preparation

  • Saute onion and garlic until soft.
  • Add stock, tofu, cashews and spices and cook for about 10 minutes.
  • Set heat on Low and add spinach.
  • Cook on low heat for 10mins until the spinach has wilted.
  • Let the mixture cool down. Add it to a blender and blend until smooth.
  • Mixed sauce with the cooked pasta ( add pasta water if needed).
  • Drizzle with lemon juice and fresh parsley.
  • Serve and enjoy!
