Coconut Lemon Vegan Crème Brulée

- 250 ml vanilla rice milk
- 30 g whole sugar (+ 20g for decoration)
- 250 g coconut cream
- 1 tsp agar-agar
- 2 tbsp cornstarch
- zest of a lemon

Preparation
- Mix all ingredients in the blender ( except lemon zest).
- Transfer mixture into a saucepan. Add lemon zest and cook mixture on medium heat while stirring. Once the cream begins to simmer, let it cook for a minute (this allows the agar-agar to be activated).
- Transfer cream into ramekins. Let them cool before placing them for 2 to 3 hours in the fridge (or 30 min freezer then fridge).
- Once the cream has set, sprinkle it with sugar and I caramelize it with a small kitchen torch. If you don't have one you can also grill your creams in the oven.
