  • 200 g dark chocolate
  • 3 eggs
  • 500 g cream
  • 250 g milk
  • 200 g raw caster sugar
  • 1 tsp vanilla extract
  • 1 pinch salt flakes

Instructions
 

Preparation

  • Place chocolate in TC ProM2.0 bowl and chop for 10 seconds, speed 8. Remove from bowl and set aside.
  • Place butterfly tool into a bowl add eggs, and sugar, and beat for 4 minutes, 30C, speed 3. Remove butterfly.
  • Add cream, milk, vanilla, and a pinch of salt and chocolate. Cook for 5 minutes at 80C, speed 5.
  • Pour into a large metal loaf tin and place in the freezer for approx 2 hours or until frozen around the edges.
  • Return to the TC ProM2.0 bowl and beat for 30 seconds, speed 9.
  • Return to the loaf pan and return to the freezer overnight.
  • If you want lighter ice cream, you can beat it a second time following the last procedure.
  • Best served fresh.
