Chocolate Banana Bread

  • 200 g oat flour
  • 45 g almond flour
  • 3 bananas
  • 80 g zucchini
  • 80 g dates
  • 80 ml plant-based milk
  • 2 tsp cocoa
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1 pinch pinch cinnamon
  • 80 g dark chocolate chips
  • 2 tbsp toasted almond shavings
  • raspberries, blackberries

Instructions
 

Preparation

  • Preheat the oven to 180 degrees.
  • In a bowl, mix the oat flour with the almond flour, cocoa, baking powder, baking soda and cinnamon.
  • Put the vegetable milk in a bowl and add the apple cider vinegar. Put this aside.
  • In a blender, put the bananas, zucchini, dates and vanilla extract and blend until smooth.
  • Add the liquid banana mixture to the bowl with the oat flour and mix until cohesive.
  • Then fold half of the dark chocolate chips through the batter.
  • Line a baking tin with baking paper and pour in the batter. Place in the oven for about 50 minutes and then let it cool down.
  • Melt the remaining half of the chocolate chips and pour this over the top of the banana bread once it has cooled down. Sprinkle with the toasted almond shavings and finish with some fresh fruit.
