  • 70 g gruyere cheese, rind removed and cut into 3cm pieces
  • 160 g full cream milk
  • 60 g olive oil
  • 1 egg
  • 170 g arrowroot flour
  • 1 tsp salt



  • Preheat oven to 220C. Grease a 24 hole mini muffin tray and set it aside.
  • Place cheese into TC ProM2.0 bowl and grate for 10 seconds, speed 10.
  • Add 160g milk, 60g olive oil, 1 egg, 170g arrowroot flour, and 1 tsp salt. Blend for 20 seconds, speed 8.
  • Scrape downsides of the bowl and blend a further 5 seconds, speed 8.
  • Fill each muffin mold 3/4 full with batter. Bake for 12-15 minutes or until puffy and just lightly browned.
  • Remove from the oven and leave to cool in the tin a few minutes before serving. Serve warm!
