Chai Banana Bread

- 200 g oat flour
- 45 g almond flour
- 3 ripe bananas + 1 extra for the top (optional)
- 80 g dates
- 80 g applesauce
- 80 ml plant-based milk
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1.5 tbsp chai mix spices
- 2 tsp baking powder
- 1/2 tsp baking soda
- 50 g pecan nuts + extra for the top
- slivered almonds for the top
Chai mix
- 1 tsp cinnamon
- 1 tsp biscuit and gingerbread spices
- 1/2 tsp ground cardamom
- 1/2 tsp ground anise
- 1/4 tsp ground ginger
Instructions
Preparation
- Preheat the oven to 180 degrees.
- Mix the oat flour with the almond flour, chai spices, baking powder, baking soda and a pinch of salt in a bowl.
- Put the vegetable milk in a bowl and add the apple cider vinegar. Put this aside for now.
- In a blender, put the bananas, dates, applesauce and vanilla extract. Blend this until smooth.
- Now add the liquid banana mixture and the vegetable milk to the dry ingredients. Mix this into a cohesive batter.
- Finally, stir the pecan pieces through the batter.
- Line a baking tin with baking paper and pour in the batter. Finish the top with the extra banana cut in half lengthwise and some slivered almonds and pecans.
- Place in the oven for about 50 minutes and then let it cool down.
