  • 1 whole cauliflower chopped up roughly (keep the stalk for juicing)
  • water or almond milk
  • 1 cup green juice pulp
  • salt and pepper
  • lemon juice

Preparation

  • Gently boil the cauliflower in water for 15-20 minutes until soft and tender.
  • Place in a blender and use some of the cooking water to retain the nutrients or use almond milk for a creamier finish (if you do not have a glass blender allowed to cool before blending).
  • Add 1 cup of green juice pulp, season with salt and pepper, and lemon juice.
  • Blend until nice and smooth, serve as a healthy nutritious lunch or dinner.
