Cauliflower Fritters With Mint Yoghurt Dip is a delicious dessert that can be enjoyed by everyone. The cauliflower fritters are lightly toasted with some mint yogurt dip on top. It’s the perfect way to enjoy a nutritious bowl of dessert without having anything too heavy in it.
Cauliflower Fritters With Mint Yoghurt Dip

- 0.5 cauliflower, broken into florets
- 0.5 onion
- 2 garlic cloves
- 15 g parsley
- 4 eggs
- 1 tsp ground cumin
- 4 tbsp rice flour
- 1 tbsp plain flour or gf flour
- 0.75 tsp bicarb soda
- 250 g full fat greek yoghurt
- 15 g fresh mint chopped

- Place cauliflower florets in a steamer dish. Place 500g of water into the TC ProM2.0 bowl and place the steamer dish on top. Set temperature to 120C, 15 minutes, speed 2. Once steamed set aside and rinse the bowl.
- Add half an onion and 2 garlic cloves to an empty TC ProM2.0 bowl and chop for 6 seconds, speed 7.
- Add cauliflower and 15g parsley and chop for a further 5 seconds, speed 5.
- Add 4 eggs, 1 tsp ground cumin, 4 tbsp rice flour, and 1 tbsp plain flour or GF flour and salt and pepper to taste and mix 10 seconds, speed 4
- Add bicarb soda and stir through 5 seconds, speed 4.
- Heat a little olive oil in a large fry pan. Place heaped tablespoons of the mixture into the hot oil and cook 2 minutes for each side until crispy, golden, and cooked through.
- Remove fritters and place them on absorbent paper.
- Make the mint yogurt dip, mix the yogurt and mint together in a bowl and serve with cauliflower fritters.
- Tips: You can use any dip you like, greek yogurt mixed with some sweet chilli the sauce is tasty too.
- Substitute yogurt for sour cream as an alternative.
