Cashew Buckwheat Porridge
Ingredients
Ingredients:
- 60 g buckwheat grains
- 20 g cashew nuts
- 1 medjool date
- 1/2 banana
- 2 tbsp almond milk
- 1 tsp vanilla extract
- 1 pinch cinnamon
- 1 pinch salt
Toping:
- Fresh fruit, almond shavings, grated coconut
Instructions
Preparation:
- Note: prepare this the night before.
- Put the buckwheat grains and the cashew nuts in a bowl and add plenty of water. Let this soak overnight.
- Rinse the buckwheat grains and the cashew nuts and put them in a blender.
- Add the remaining ingredients: the date, 1/2 banana, almond milk, vanilla extract, cinnamon, and a pinch of salt. Blend this until smooth.
- Put the cashew buckwheat porridge in a bowl and finish with fresh fruit, some almond shavings, and grated coconut.
