Ingredients:

  • 60 g buckwheat grains
  • 20 g cashew nuts
  • 1 medjool date
  • 1/2 banana
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 1 pinch cinnamon
  • 1 pinch salt

Toping:

  • Fresh fruit, almond shavings, grated coconut

Instructions
 

Preparation:

  • Note: prepare this the night before.
  • Put the buckwheat grains and the cashew nuts in a bowl and add plenty of water. Let this soak overnight.
  • Rinse the buckwheat grains and the cashew nuts and put them in a blender.
  • Add the remaining ingredients: the date, 1/2 banana, almond milk, vanilla extract, cinnamon, and a pinch of salt. Blend this until smooth.
  • Put the cashew buckwheat porridge in a bowl and finish with fresh fruit, some almond shavings, and grated coconut.
