- 350 g carrots
- 105 g seed oil
- 100 g whole cane sugar
- 240 g flour
- 6 g baking powder
- 80 g pecans
- 35 g pecans to decorate

Preparation
- Juice the carrots to obtain juice and pulp.
- Pour the juice into a bowl, add oil and sugar and mix with a whisk.
- Add the pulp and mix.
- Add sifted flour and baking powder and pecans and mix well together.
- Pour the mixture into the muffin moulds, and add the second part of chopped pecans on top of the dough. Bake at 170 ° C for 13-14 minutes. Time and temperature vary by oven.
