  • 350 g carrots
  • 105 g seed oil
  • 100 g whole cane sugar
  • 240 g flour
  • 6 g baking powder
  • 80 g pecans
  • 35 g pecans to decorate

Instructions
 

Preparation

  • Juice the carrots to obtain juice and pulp.
  • Pour the juice into a bowl, add oil and sugar and mix with a whisk.
  • Add the pulp and mix.
  • Add sifted flour and baking powder and pecans and mix well together.
  • Pour the mixture into the muffin moulds, and add the second part of chopped pecans on top of the dough. Bake at 170 ° C for 13-14 minutes. Time and temperature vary by oven.
