Carrot Patties ( juice pulp recipe)

- 550 g carrot pulp from peel & juice carrots
- 450 g zucchini minced in processor
- 100 g oat flour
- 2 tbsp flaxseed, ground
- 1 onion, minced
- 3 cloves of garlic, minced, optional
- 20 g mustard optional
- 2 whole eggs
- 50 g tomato paste
- 1 tsp sweet paprika powder, optional
- 1 tsp curry powder
- 1/2 tsp cayenne pepper, optional
- 100 g bread crumbs
- 1 tsp salt
- 1 tsp pepper
Instructions
Preparation
- Add all ingredients into a mixing bowl and mix well.
- You can use an ice cream scoop and press the mix into the scoop; it comes out perfect every time.
- Fry in oil to cook.
- Pre-fry in oil and freeze for later.
- Note: the air fryer will dry them out. So if you pre-fry and freeze you can reheat in Airfryer.
