  • 550 g carrot pulp from peel & juice carrots
  • 450 g zucchini minced in processor
  • 100 g oat flour
  • 2 tbsp flaxseed, ground
  • 1 onion, minced
  • 3 cloves of garlic, minced, optional
  • 20 g mustard optional
  • 2 whole eggs
  • 50 g tomato paste
  • 1 tsp sweet paprika powder, optional
  • 1 tsp curry powder
  • 1/2 tsp cayenne pepper, optional
  • 100 g bread crumbs
  • 1 tsp salt
  • 1 tsp pepper

Instructions
 

Preparation

  • Add all ingredients into a mixing bowl and mix well.
  • You can use an ice cream scoop and press the mix into the scoop; it comes out perfect every time.
  • Fry in oil to cook.
  • Pre-fry in oil and freeze for later.
  • Note: the air fryer will dry them out. So if you pre-fry and freeze you can reheat in Airfryer.
