Ingredients fro the cake
- 3 eggs
- 1 cup white sugar
- 2 carrots
- 1/2 cup vegetable oil
- 1 1/2 cup flour
- 1 tsp baking powder
- 1 tsp honey
- 1 cup carrot juice
- fresh ginger
- groundnut
- cinnamon
- dried raisins & walnuts
Ingredients for the icing
- 1 1/2 cup unsalted butter at room temperature
- 2 cup sugar powder
- 4 tsp heavy cream
- 1 pinch salt
Instructions
Preparation of the cake
- Place all the ingredients for the cake in your Optimum high-speed blender and blend until smooth.
- Transfer batter to the baking mold and bake in the oven for 40 min at 200C.
- Let it cool down.
Preparation of the icing
- Place room temperature butter, icing sugar, and heavy cream in your Optimum blender and blend until smooth.
