Buttermilk Fruit Cake Recipe
Ingredients
Ingredients
- 500 g flour
- 10 g baking powder
- 200 g sugar
- 4 eggs
- 500 ml buttermilk (lactose-free if required)
- 600 g fruits according to season
- 2 tbsp powdered sugar for dusting
- 1 tsp vanilla essense
- lemon zest
Instructions
Preparation
- Preheat the oven to 200 degrees.
- Add the flour, baking powder, eggs, buttermilk, vanilla flavor, and 200g sugar in the blender jug and mix for about 30-35 seconds (don't forget to use the tamper!)
- Place the dough on a baking sheet lined with baking paper and spread the wash and, if necessary, cut fruit over it.
- Bake at 200-degree Celsius for about 20 minutes. The baking time may increase depending on the height of the cake. We, therefore, recommend using a stick test to test whether the cake is ready: To do this, prick the center of the cake with a wooden skewer. If no dough sticks to the stick, the cake is ready, otherwise, the cake must be baked again for 5 minutes. If the cake gets too dark on the surface, it can be covered with baking paper or aluminum foil.
- After cooling, sprinkle with powdered sugar and garnish with the remaining fresh berries.
