Buckwheat Pancakes Recipe

- 2 ripe bananas
- 2 large eggs
- 2 tbsp milk of choice
- 3 tbsp buckwheat flour
- 2 tbsp chia seeds
- 1/2 tsp ground cinnamon
- 1 tsp baking powder

- Peel the ripe bananas and place them in the blender.
- Add the eggs and milk, buckwheat flour, chia seeds, ground cinnamon, baking powder, and vanilla essence.
- Blend all the ingredients together until well combined. Make sure to scrape down any dry bits from the sides and blend again to ensure a smooth batter.
- Place a large frypan over medium heat. Add a knob of butter to the pan and let it melt.
- Once the butter has melted and the pan is heated, pour a portion of the pancake batter into the pan. The size of each pancake will depend on your preference, but aim for about 3-4 inches in diameter.
- Use a spatula to carefully flip the pancake and cook for an additional 2-3 minutes on the other side. Repeat this process with the remaining pancake batter, adding more butter to the pan as needed.
- Once cooked, transfer the pancakes to a plate. Top the pancakes with some fruit of your choice, such as berries or sliced bananas. Drizzle a generous amount of maple syrup over the pancakes. Your delicious buckwheat pancakes are now ready to be enjoyed!
