Buckwheat Pancakes Recipe

Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 2 tbsp milk of choice
  • 3 tbsp buckwheat flour
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1 tsp baking powder

Preparation

  1. Peel the ripe bananas and place them in the blender.
  2. Add the eggs and milk, buckwheat flour, chia seeds, ground cinnamon, baking powder, and vanilla essence.
  3. Blend all the ingredients together until well combined. Make sure to scrape down any dry bits from the sides and blend again to ensure a smooth batter.
  4. Place a large frypan over medium heat. Add a knob of butter to the pan and let it melt.
  5. Once the butter has melted and the pan is heated, pour a portion of the pancake batter into the pan. The size of each pancake will depend on your preference, but aim for about 3-4 inches in diameter.
  6. Use a spatula to carefully flip the pancake and cook for an additional 2-3 minutes on the other side. Repeat this process with the remaining pancake batter, adding more butter to the pan as needed.
  7. Once cooked, transfer the pancakes to a plate. Top the pancakes with some fruit of your choice, such as berries or sliced bananas.
    Drizzle a generous amount of maple syrup over the pancakes. Your delicious buckwheat pancakes are now ready to be enjoyed!
