Blender Blueberry Skillet Pie Recipe in Minutes

- 4 tbsp butter, divided
- 1/2 cup whole milk
- 1/2 cup all purpose flour
- 4 eggs
- 3 tbsp sugar
- 1 tsp vanilla
- 1/4 tsp salt
- zest of one lemon
- 1 cup blueberries
- confectioners sugar for dusting

- Preheat your oven to 375°F (190°C) to ensure it's ready when you need to bake the pie.
- In a small saucepan or in the microwave, melt 2 tablespoons of butter and set it aside to cool slightly.
- Take out your blender and make sure it's clean and ready for use.
- Add the milk, flour, eggs, sugar, vanilla, salt, and lemon zest into the blender. Blend the mixture on medium speed until it's smooth and well combined.
- Gently fold in the blueberries into the blended mixture. Make sure they are evenly distributed throughout the batter.
- Place a 10-inch oven-safe skillet on the stovetop over medium heat. Add the remaining 2 tablespoons of butter to the skillet and allow it to melt and coat the bottom and sides of the skillet.
- Carefully pour the blueberry batter into the skillet with melted butter. Spread it evenly using a spatula.
- Transfer the skillet to the preheated oven and bake for approximately 25-30 minutes, or until the pie is golden brown and set in the center. You can check the doneness by inserting a toothpick into the center—if it comes out clean, the pie is ready.
- Once the pie is baked, remove it from the oven and allow it to cool for a few minutes. Dust the top of the pie with confectioners sugar for a decorative touch.
