  • 40 g pine nuts
  • 50 g parmesan
  • 1 cup basil leaves
  • 150 ml olive oil
  • 2 garlic cloves
  • salt
  • pepper

Instructions
 

Preparation

  • Add the roasted pine nuts, parmesan, garlic, salt, black pepper, olive oil and basil to the blender. Blend on high for 15 seconds.
  • Open the lid to scrape the content from the sides of the jug towards the center. Then put on the lid again and use a pulse to continue to blend until finely chopped (about 30-60 seconds longer).
  • Transfer the pesto to a small container and cover it with plastic wrap, pressing the wrap so it lies against the pesto.
  • Store in the fridge and consume within 3-4 days.
