- 40 g pine nuts
- 50 g parmesan
- 1 cup basil leaves
- 150 ml olive oil
- 2 garlic cloves
- salt

- Add the roasted pine nuts, parmesan, garlic, salt, black pepper, olive oil and basil to the blender. Blend on high for 15 seconds.
- Open the lid to scrape the content from the sides of the jug towards the center. Then put on the lid again and use a pulse to continue to blend until finely chopped (about 30-60 seconds longer).
- Transfer the pesto to a small container and cover it with plastic wrap, pressing the wrap so it lies against the pesto.
- Store in the fridge and consume within 3-4 days.
