  • 500 g plain flour
  • 1 tbsp dry active yeast
  • 300 g lukewarm water
  • 1 tsp salt
  • 2 tbsp light brown sugar
  • 1 tbsp bicarbonate soda
  • 1 handful sesame or poppy seeds

Preparation

  • Place the yeast and 300g of lukewarm water in the TC bowl. Stir for 2 minutes, 37C, speed 2.
  • Add flour, salt, and brown sugar. Using the kneading 500g function, knead for 3 minutes.
  • Gently take the dough out and place it in a bowl, cover and allow to double in size, may take 1-2 hours. Once risen, place the dough onto a floured surface.
  • Divide the dough into 10 portions 66 and roll each portion into a ball on your surface. Cover and leave to rise for another 20 minutes. Preheat your oven to 190C.
  • Prepare two baking trays with baking paper. Pour 1 liter of water into a large saucepan and bring to a boil. Once boiling, add 1 tbsp bicarb soda and leave to simmer on medium-low heat.
  • Prepare your bagels, take each ball and poke a hole in the middle with your finger. Place 2 bagels at a time into the simmering water and simmer for 30 seconds on each side. Immediately remove from the pan with a slotted spoon and place on the prepared baking tray.
  • Brush each bagel with a little milk and sprinkle with seeds. Repeat with the rest of the bagels until finished. Bake in the oven for 20-25 minutes until golden brown.
  • Remove from the oven and leave to cool down slightly then carefully remove from the baking paper.
  • Best served warm and fresh. Perfect with cream cheese and jam.
