Almond Financier/ Almond Cake

Ingredients

  • 125 g ground almonds
  • 180 g flour
  • 150 g butter
  • 5 egg white
  • 1 pinch salt
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 200°C.
  2. Put the butter into the bowl and let it melt at 120°C, speed 3 for 10 minutes
  3. Then add the other ingredients and let it knead for 40 seconds at speed 3, then again for 3 minutes and at speed 9.
  4. Then wrap the dough in cling film and chill in the fridge for 30 minutes.
  5. Grease your financier mould and fill them 2/3 with the dough. Bake for 15-20 minutes. Once done let them cool before taking them out of the mould.
