Almond Filled Cookies Recipe

Ingredients

  • 250 g flour
  • 100 g dark brown caster sugar
  • 150 g butter
  • 1 tsp gingerbread spice
  • 1 pinch baking powder
  • 1 pinch salt
  • splash of milk

Ingredients for the filling

  • 100 g almonds
  • 100 g sugar
  • 1 egg

Preparation

  1. Add almonds into a blender and grind well. Mix with the sugar and add a little egg until you have a cohesive mixture. Pack in a sandwich bag and put it in the fridge.
  2. Make the dough by mixing the flour with the sugar, baking powder, salt, gingerbread spices and butter. Rub into a crumble. Then add a little milk until you have a cohesive dough and let it rest in a plastic bag in the fridge for half an hour.
  3. After resting, roll out the dough to about half a cm thick (sprinkle your work surface with flour first). Cut out 20 circles.
  4. Place 10 circles on a baking tray lined with parchment paper. Divide your almond paste into 10 equal pieces and make a ball of it. Press slightly flat into a disc and place a disc of almond paste on each dough slice. Place a slice of dough on top and press the edges with a fork.
  5. Press half an almond into each cake and brush the cakes with beaten egg yolk. Bake them in a preheated oven at 175 degrees (convection 160) for about 25 minutes until golden brown and done. Let them cool on a wire rack.
  6. Enjoy!
