Chicken dishes have been part of African cuisine for decades. It is popular in most West African countries like Nigeria and Cameroon. It is also a delicacy in some eastern African countries like Kenya. It is actually popular in festive seasons and can be practically paired with anything. There are many ways of cooking chicken, and of course, I love them, but the exotic African chicken stew recipe is a must-try.

African Chicken Stew

- 500 g chicken breasts
- 1 red onion
- 1 white onion
- cilantro
- 1 carrot
- 1 tomato
- generous piece of ginger
- 2 tbsp cornstarch
- 2 tbsp rice vinegar
- 40 g soy sauce
- 30 g worcestershire sauce
- 1 tbsp tomato paste
- 100 g brown sugar
- 400 ml water

Preparation
- Place the chicken breasts in your ThermoCook bowl.
- Chop the red and white onions into quarters, and chop the cilantro, carrot and tomato. Add a generous piece of fresh ginger, corn starch and rice vinegar with the soy sauce and Worcestershire. For the red colour add 1 tablespoon of tomato paste. And finally the brown sugar and water.
- Close your lid and choose speed 2 on the reverse for 15 minutes on 100 degrees Celsius.
