- 2 onions, peeled and quartered
- 2 tsp chicken or vegetable stock powder
- 0.5 tsp ground nutmeg
- 150 g ream
- 1 kg butternut pumpkin, peeled and chopped into 3cm cubes

Preparation
- Preheat oven to 180C.
- Place 1000g chopped pumpkin and 2 onions quartered on a roasting tray. Season with salt and pepper and drizzle with olive oil.
- Roast for 20-30 minutes until lightly roasted.
- Add roasted onions to the TC bowl and chop for 5-10 seconds at a speed of 6.
- Place roasted pumpkin and onion into the TC ProM2.0 bowl and blend on speed 7 for 7 seconds.
- Add 600g water and stock powder. Set the temperature to 100C, 20 minutes, speed 2.
- Add cream and nutmeg, blend for 30 seconds, speed 4.
- Serve immediately with crusty bread.
- Tips: Use any pumpkin as you like. Make dairy-free and use coconut cream instead of cream.
